Sweet potatoes are one of life’s greatest gifts. How can something so tasty also be so healthy. It is truly a little miracle. Turning this healthy vegetable into a fry feels so right. Get your burgers and your ketchup ready because these amazing fries are coming at you fast and yummy!
Let’s get going on these babies. Preheat your oven to 425 degrees F so it is ready to go when you are. You wait for no one, they wait for you. Write that down. Grab some sweet potatoes and peel them. Now slice them long ways about 1/4″ thick.
Next, you guessed it, cut the potatoes into 1/4″ thick sticks… or fries…
Add your fries to a bowl and drizzle in some olive oil. Toss to coat the fries evenly. Your method for tossing is between you and the cooking gods. I like to just toss them in the bowl because I don’t need anymore dishes to do but if you would like to use a spoon/spatula/tongs to toss your fries, don’t let me stop you. Add in some salt and pepper and try a new and exciting method to toss so all the fries get the same salt and pepper love.
Now, spread those beauties onto a baking sheet and arrange them into a single layer. This is important for the crisping process of fries. If they get too crowded they get all grumpy and just steam instead of getting a those nice crispy edges.
Bake your gorgeous health sticks for about 30 minutes, stirring once halfway through. Please don’t fret if you see some darker fries, those really well done fries have the best flavor! Enjoy these next to your favorite burger or just by the handful.
