How often do you want a giant plate of creamy pasta and pass because of the guilt? I love pasta and more than that, I love pasta I don’t have to feel bad about eating. Enter this amazing and creamy Alfredo sauce that uses blended cottage cheese (who knew about this?!) to cut calories but not flavor! Honestly, it is so good, my family asks for this for dinner at least three times a week.
Okay, let’s dive in. This is recipe is really quick to throw together which is another win in my book. Get some cottage cheese, milk, parmesan cheese, garlic powder, corn starch (optional), salt, and pepper out.
Throw all of those tasty ingredients into a food processor.
Next, blend it until it is all nice and creamy and combined. Sneak a little taste, you are not going to regret it!
Now, pour this delightful mixture into a pan and heat slowly until it begins to thicken. If you opted out for the corn starch (no worries, it is just as good) your sauce may be thinner but that is just fine!
Once the sauce has thickened, add cooked and drained noodles and any other add-ins you like and serve immediately. My favorite is chicken and peas while my husband like chicken and broccoli. The sky is the limit, let your heart and tastebuds guide your journey. *drools*
