These little homemade candies are such a delight. Dare I say they are a joy?! What I do know is that these are packed full of gooey coconut, a whole almond, and are coated in delicious chocolate. Worth. Every. Bite.
Let’s begin. Start by melting some chocolate in a double boiler. Any chocolate will work. I’ll leave that choice in your hands. If you need a step-by-step on melting chocolate using a double boiler, you can find that here. I promise, it’s not hard at all! Once you have your melted chocolate, fill each well of a silicone mold with a small amount and use the back of a spoon to coat the walls completely. Place in the fridge to chill while you make the filling.
Next, mix your coconut and sweetened condensed milk together. Seriously. Could this be any easier? No need to heat this mixture, you just need to mix it together. Sneak a bite of this mixture. It is to die for.
Add an almond to each well. Then spoon the coconut filling until each well is filled a little more than 3/4ths of the way. If you fill them too full it is hard to smooth out the chocolate on the bottom, so be aware when you are filling.
Now that the innards are in, spoon or pipe some chocolate over the top and smooth with an offset spatula so that each little well is filled completely and the chocolate has bonded. Chill overnight or until completely set.
Once these are completely set, peel off the silicone mold and serve immediately. If you are not quite ready to serve, just pop them in the fridge until serving. Honestly, could these be any easier? Share these with only those you love the most. They are precious.
