Okay. I will be honest here, I don’t love most oatmeal raisin cookies. Picture this: you walk into a room and from afar you see a delicious chocolate chip cookie. You make a bee line over to said cookie elbowing anything and everything out of your way. Your mouth is salivating imagining the chocolate melting on your tongue and you reach the cookie only to find out the cookie is an oatmeal raisin cookie. Grr.
Now with that said, this cookie is the exception. I would trade a chocolate chip cookie for this oatmeal raisin cookie. It’s that good. Full of oats, juicy raisins, and cinnamon plus the extra nutty flavor from the browned butter. Mmm mmm mmm!
This cookie starts out the way all cookies should, with browned butter. This gives the cookies an incredible nutty depth of flavor. For a how to on browning butter see here. Now that you have your butter ready, cream your butter and both sugars. Take your time here, make sure they are really light and fluffy. Add the eggs one at a time followed by the vanilla.
Next, sift the flour, baking soda, cinnamon, and salt in until just combined. If your dough is too soft, you can add up to a half cup more flour to make it easier to work with. You don’t really have to sift the flour if you don’t want to, but it does give the dough a silky texture. It’s up to you, this is your journey. Now mix in the oatmeal and raisins. Take some time to really inhale this magical mixture that you just made. If you like to live on the edge, eat some dough. It’s what dreams are made of.
Once you’re ready to bake, preheat your oven to 375 degrees F. Scoop your dough onto a parchment or silicone lined baking sheet about 2 inches apart and bake for 12-14 minutes.
