Ah, no bake chocolatey peanut buttery oatmeal cookies. If there is one cookie that I make that pleases every person in my life, it is this baby. I love this cookie, and not only do I always have all the ingredients in my pantry, they are amazingly easy to make! Growing up we called these Cool Cookies; I have no idea why, but it stuck and that is how I always refer to them. There’s not much more to say, the magic of the marriage between chocolate, peanut butter, and oatmeal say it all. Let’s dive in.
These cookies are no bake, which makes their assembly very quick but we are going to use the stove to achieve the chewy and melty texture we are craving. Start by adding some butter, milk, sugar, cocoa powder, and salt to a cold pot. Next, turn the burner on to medium heat, low and slow is the name of this game. Stir constantly until the mixture comes to a boil. This part is really important: boil the mixture for exactly 1 minute. I’m serious, set a timer. Don’t just guess or play with time willy nilly.
Why it is important to boil for the correct amount of time:
- If the mixture boils under a minute, the cookies will not set properly and you will not be able to pick them up and devour them.
- If the mixture boils over one minute, the sugar will over caramelize and the cookies will be very crumbly. Not good.
Once the mixture has boiled for 1 minute, turn off the heat and add some oats, peanut butter, and vanilla and stir to combine.
Next, work quickly to scoop cookies onto wax or parchment paper or other non-stick surface using a cookie scoop. If you move too slowly, the cookie mixture will begin to set in the pot and it will be hard to scoop them out.
Look at the peanut butter swirl. *drools* The next step is to store these in an airtight container somewhere away from your family. Eat them while you are hiding in your pantry from your kids. It’s called self-care. Look it up.
