Do you ever just need something quick and hearty to feed those tiny humans running around your kitchen? Man, I feel you. This hamburger soup is healthy and really fast to throw together. Let it take care of your family tonight while you have a glass of wine.
Here we go. This recipe is really only two steps. First, get a large pot out; big enough to fit all the ingredients because this is a one pot meal. Can I get an amen for less dishes to do? Next, brown your meat of choice until it is all cooked through.
A word on meats:
I know I called this recipe hamburger soup, but trust me when I tell you, any ground meat will work. I have made it with ground beef, ground chicken, and ground turkey and they are all equally yummy. Go crazy and use shredded chicken or sausage. Let the wind blow you to the depths of your freezer and use what you have.
Now that the meat is all cooked through, dump all the other ingredients into the pot. It really is as simple as that. Give it a good stir and bring the soup to a boil then reduce to a simmer. You only need to let this simmer for about 20 minutes to get the flavors all mingling and friendly, but you can leave this for as long as 2 hours if you get busy or want a little more depth of flavor.
That’s it my loves. Serve this with some crusty bread or some croutons and enjoy the silence as your family scarfs it down.
